There is a big change in Asian eating and it is not just the processed food (often loaded with sugar etc) but also something that Dr Sten doesn't mention at all: a much higher consumption of meat and other animal products. His description of the cause of insulin resistance is the old simple, and logical, "too much sugar leads to insulin resistance" which doesn't explain the insulin spike that was observed early (1930s?) in connection with meat. Modern research has found that it is the fats from animal products that clog up the receptors so cells become insulin resistant. ( https://nutritionfacts.org/video/what-causes-insulin-resistance/) This can explain why practically all Diabetes II patients can be completely taken off insulin in a matter of weeks when going to a whole-food plantbased low SOS (SaltOilSugar) which can include lots of rice or other carbohydrates. See Dr Barnard or Dr John A. McDougall (The Starch Solution).
LCHF can, I know, lead to people being taken off insulin too, and can definitely help people that have been eating SAD (=Standard American Diet) diet and getting standard diabetes treatment. So it is a step in the right direction, but it's not really stopping insulin resistance. It's more using an extreme limitation to avoid the problem. Like if someone is afraid of spiders and you lock them in a room totally cleaned out of spiders. They aren't afraid (while there) but the phobia is not gone. Whereas maybe Hypnosis, NLP, EFT, or other psychological treatments can make them release their overreaction to spiders.
So if someone is insulin resistant and you take away the sugar, by "locking them into a very restrictive diet", they won't need the insulin WHILE THERE, but the resistance to insulin, which is the base of the problem, will still be there.
